NUTR 3104 - The Science of Food

Description: The Science of Food is the study of foods as chemical compounds and the chemical reactions and physical changes which occur from production to consumption. The use of sensory evaluation techniques and evaluation of data will also be examined.  The course includes hands-on practice in the purchasing, preparation, serving and storage of foods to promote safety and retain nutritive value and palatability.  Menu planning, purchasing options, a variety of food preparation techniques, and various meal service types are covered.  Lab required.
