    Current Trends and Issues in Nursing focuses on contemporary nursing issues in today’s changing health care field.  Emphasis is on legal and ethical considerations, changes in health care delivery systems and the responsibilities of the nurse.

  • NURS 4102 - Fundamentals of Nursing Research

    2 Credit Hours
    Fundamentals of Nursing Research introduces similarities and differences of quantitative and qualitative studies as well as statistical methods utilized in nursing research.  Legal and ethical issues, theoretical and conceptual frameworks, and literature reviews will be examined.  Emphasis is on the nurse as a consumer of nursing research.

  • NURS 4115 - Community Health Nursing

    Community Health Nursing integrates current knowledge, theory, and research relevant to nursing practice and public health practice to promote and preserve the health of populations.   • NUTR 1653 - Basic Nutrition #

    3 Credit Hours
    Students explore normal nutrition for all ages including physical development and health; functions of nutrients and their requirements for digestion, absorption, metabolism, and planning of normal diets.
    Note: This course does not count toward the Nutritional Sciences minor.
  
  • NUTR 2103 - Food Preparation and Meal Management

    3 Credit Hours
    Principles in the preparation of selected foods including composition and properties, methods of preparation and processing to retain nutrients, and standards for desirable products. Menu planning including purchasing, preparing, and serving meals. Emphasis is given to table settings and appointments, various forms of meal service, and special occasion functions.  Lab required.
  
  • NUTR 2111 - Introduction to Nutritional Sciences

    1 Credit Hours
    Students explore career opportunities in health professions focusing on careers in Nutrition, Dietetics, and Allied Health.  They discuss educational pathways, roles and responsibilities of health care professionals, and memberships in professional organizations.
    Note: Students should take the course the first semester in which Nutritional Sciences major is considered or when student is accepted into Nutritional Sciences: Dietetics.
  
  • NUTR 3104 - The Science of Food

    4 Credit Hours
    The Science of Food is the study of foods as chemical compounds and the chemical reactions and physical changes which occur from production to consumption. The use of sensory evaluation techniques and evaluation of data will also be examined.  The course includes hands-on practice in the purchasing, preparation, serving and storage of foods to promote safety and retain nutritive value and palatability.  Menu planning, purchasing options, a variety of food preparation techniques, and various meal service types are covered.  Lab required.

  • NUTR 3113 - Consumer Issues #

    3 Credit Hours
    Students will pursue studies of consumer decision making related to the marketplace and financial management, placing emphasis on consumer concerns related to personal and family budgeting, credit, and purchasing of durable and non-durable goods. Students will analyze outcomes of fraud, housing, insurance, investments, legislation, and protective agencies on consumers.

    Students consider general health assessment, nutrient-drug interactions, nutrition care process relating to medical nutrition therapy. Physiological and metabolic bases for dietary modifications in certain health conditions. Nutrition management of health conditions through medical nutrition therapy.

  • NUTR 3955 - Food Systems Management

    5 Credit Hours
    Organization and management of food service operations including  human resource management and related laws, performance improvement techniques, material management, workflow and production, laws and regulations in food service sanitation, leadership styles,  communication and interpersonal skills, and financial management. Types of food service systems and environments and quality improvement related to food systems.  Lab section will emphasize the production of quantity foods, menu planning, procurement, costing, preparation, service, sanitation, delivery systems, and use and care of quantity food equipment.  Lab required.

    Students evaluate nutrient needs and dietary concerns of individuals and families from conception through the senior adult years.

  • NUTR 4263 - Geriatric Nutrition

    3 Credit Hours
    Students focus on the physiological, psychological, social and financial aspects of aging that affect health and nutritional status. Students learn the impact of disease, disability and changing nutritional needs as well as screening and assessment tools to identify appropriate interventions to improve health and nutritional status. Students learn to apply legal and ethical considerations and consider government and community resources for positive outcomes.

    3 Credit Hours
    This course is an introduction to the Organizational Leadership Bachelor of Science Program. Essential components will include: overview of program expectations; principles of adult learning; resources for success including library, campus, online resources and mentoring relationships; personal wellness/stress and time management techniques; study and test-taking skills; and basic computer skills for working in an online environment.

    A study of communication in the workplace within a framework of organizational ethics. Essential components and course content include: listening, verbal and nonverbal communication, written expression, and professional presentation methods.

    A managerial overview of fiscal management within organizations.     3 Credit Hours
    This course is designed to examine the dynamics of workplace and personal ethics through the study of basic philosophical theories. Essential components and course content will include: leadership in the context of self-governance, responsibility, adherence to principles, integrity, and constancy of purpose. Current case studies will be used to apply ethical theories.

  • ORGL 4223 - The Individual, the Organization, and Society #

    3 Credit Hours
    An examination of contemporary issues that affect organizations. Essential topics include environmental stewardship, social responsibility of the organization, effects and implications of globalization, the status of individual freedom within the organization, diversity, and the ramifications of technological change. This seminar course will be organized around student discussion and topical papers.

    This course is a study of theories that influence leadership and management with application to a variety of work situations.     This course introduces the student to the concept of markets and stakeholders. Essential components and course content will include: an overview of competitive markets, buyer behavior, development of new markets and products, marketing communication, distribution channels, pricing, and marketing mix strategies. It will include a discussion of external environmental factors and stakeholder analysis. Students will be able to evaluate market needs, select target markets and develop an appropriate market mix.

    This course provides the student the opportunity to integrate concepts and theories covered in the core with their area of focus. Students will design and implement a capstone project related to their area of focus culminating in a written and oral presentation.
