NUTR 2103 - Food Preparation and Meal Management

3 Credit Hours
Principles in the preparation of selected foods including composition and properties, methods of preparation and processing to retain nutrients, and standards for desirable products. Menu planning including purchasing, preparing, and serving meals. Emphasis is given to table settings and appointments, various forms of meal service, and special occasion functions.  Lab required.
