NUTR 3104 - The Science of Food

Description: Students study foods as chemical compounds and the chemical reactions and physical changes which occur from production to consumption. Students use sensory evaluation techniques and evaluate data as appropriate. Students complete hands-on practice in the purchasing, preparation, serving and storage of foods to promote safety and retain nutritive value and palatability. Students become familiar with menu planning, purchasing options, a variety of food preparation techniques, and various meal service types. Students will complete a required lab co-requisite.

Credit Hours: 4
Prerequisite: NUTR 1653 Basic Nutrition with a minimum grade of C.
Co-requisite: NUTR 3104L The Science of Food Lab
